
I got this recipe off of Amy's Eating Low site (she has AWESOME recipes!!!), and it's soooo yummy. She didn't have exact counts so I weighed and measured everything. The nutritional info is below. It really is good!!! I've made it twice. You can use any cheese you like. I used a total of 8 oz of cheese so it was 1 oz of cheese per serving. I also used Half and Half, but you can use Heavy Whipping Cream (I used that last time). Either way it turns out yummy

Zucchini Quiche
Ingredients
10 oz fresh Zucchini (cut thin)
5 eggs
1 cup Half and Half
6 pieces of Bacon (cooked and crumbled)
4 oz Cheddar Cheese (shredded)
4 oz Mozzarella Cheese (shredded)
Salt and Pepper to taste
Directions
Preheat oven to 350*. Cook bacon and crumble it. Slice zucchini into thin slices. Mix eggs and cream in a bowl. Spray pie plate with cooking spray. Place a layer of zucchini on the bottom of the pie plate and put zucchini around the sides as well. Add a layer of bacon and then a layer of cheese. Add another layer of zucchini and then another layer of bacon and then cheese. Pour the egg/cream mix into the pan. Top with cheese. Bake for 35-40 minutes or until set (mine took 40 minutes, but check after 30 minutes).
